Mucho many thanks for the recipe! Y'know, I actually bought bulgar 3 weeks ago thinking it was couscous and was dismayed to learn it takes as long as brown rice to cook. Ah, but a little planning ahead will do it!! And I have a bag full of mushrooms just waiting for this wonderfully easy recipe!!!
And since I kinda flunked the last challenge, will give Week 7 an honest effort!
Thanks again me dear and keep up with the recipes!! [maybe I should just tell you what weird things I buy - like eggplants looked good this week so I had a vision of making ratatoui (sp??) but alas, the eggplant is just sitting on the counter...] Kris... who has an inner chef waiting to come out...
Eggplant: peel it, cube it, saute it in some olive oil with some garlic, throw in some salt & pepper. Toss a handful of parsley over it and serve with buttered pasta. That's what I'm having for dinner tonight! :-) I get random foods to cook, too, since I get a box of mystery produce each week. It's really gotten me learning, that's for sure!
Wow! Again, SOOOO EASY yet I would have never thunk of it! I thought eggplant was harder to prepare - something with salt and getting the bitterness out... but shows how much I know.
You CAN cube it up or slice it up and then dump a ton of kosher salt all over it, let it sit for an hour to draw out excess moisture, and then rinse off the salt. I never do.
